Ingredients 

1 cup Arborio rice

1/2 cup dry white wine

4 cups chicken or vegetable broth

1 cup sliced mushrooms

1/2 cup finely chopped onion

2 cloves garlic, minced

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley for garnish

1. In a sauce pan, heat the broth and keep it warm over low heat.

3. Toss in the arborio rice  toss to coat with oil and toast for two to three      minutes.

4. Add the white wine and stir continuously until it is absorbed.

5. Start adding one ladle of warm broth at a time, stirring often. Add the        next ladle after letting it absorb mostly.

6. Stir in the sliced mushrooms after adding half of the broth.

7. Keep adding broth and tossing the rice for another 18 to 20 minutes, or    until it is creamy and al dente.

8. Add the Parmesan cheese and season with pepper and salt.

9. Before serving, garnish with fresh parsley.
